Ingredients

  • ½ small head of cabbage, thinly sliced
  • 1 ripe mango, thinly sliced
  • 2–3 scallions, chopped
  • Fresh cilantro, to taste
  • 1 carrot, shredded
  • 1 tbsp black sesame seeds
  • Juice of 1 fresh lime
  • A splash of rice vinegar
  • 1 tbsp maple syrup
  • A splash of soy sauce (or tamari for gluten-free)

Steps

  1. Thinly slice cabbage, shred the carrot, and chop cilantro and scallion. Add to a large mixing bowl.
  2. In a small bowl, whisk together lime juice, rice vinegar, maple syrup, and soy sauce.
  3. Pour dressing over the cabbage mix and toss to coat evenly.
  4. Add thinly sliced mango and gently mix through.
  5. Top with black sesame seeds and serve fresh.
