Peach & Herbed Burrata Summer Salad

There’s just something about peaches in the summer that feels magical. This salad is a mix of sweet, creamy, crisp, and herbaceous—perfect for a warm evening when you want something light but satisfying. I threw this together with what I had on hand, and it ended up being one of those “why didn’t I make this sooner?” kind of meals.


Ingredients (serves 2–3)

  • 2 ripe peaches, sliced
  • 1 ball of burrata (or fresh mozzarella torn into pieces)
  • A few big handfuls of arugula or baby spinach
  • 1 small cucumber, thinly sliced or shaved into ribbons
  • A small handful of fresh basil, torn
  • A few mint leaves, finely chopped
  • A small shallot, very thinly sliced
  • ¼ cup pistachios or sliced almonds, lightly toasted
  • A drizzle of olive oil
  • Squeeze of fresh lemon juice
  • A drizzle of honey (optional, but so good with the peaches)
  • Balsamic glaze (optional)
  • Salt and pepper, to taste

Instructions

  1. Start by toasting your nuts in a dry skillet for a couple of minutes—just until they’re golden and smell amazing.
  2. In a small bowl, whisk together a bit of olive oil, lemon juice, honey (if using), salt, and pepper.
  3. Layer your greens, peaches, cucumber, and shallots in a shallow bowl or platter.
  4. Tear the burrata over the top in big creamy pieces.
  5. Add the basil, mint, and toasted nuts.
  6. Drizzle with your dressing and finish with balsamic glaze if you want a little extra depth.
  7. Top with flaky sea salt and a few cracks of black pepper.
  8. Serve it immediately while the peaches are juicy and the burrata is soft.

Wellness Notes

  • The healthy fats in the olive oil and nuts support hormone balance and skin health—especially important during postpartum recovery or thyroid-related healing. 
  • While the burrata adds incredible flavor and richness, keep in mind that dairy can be inflammatory for some and may contribute to hormonal acne flare-ups. That said, I’m a big believer in not over-restricting. If it brings joy and you’re not overly sensitive to dairy, enjoy every bite. Food is meant to nourish body and soul.
