This tofu scramble is a go-to for busy mornings—high in protein, totally customizable, and toddler-approved. With turmeric for anti-inflammatory support and nutritional yeast for a savory, cheesy flavor, it’s a simple, satisfying meal that comes together in minutes.


Ingredients (1-2 Servings)

  • 1 block of tofu
  • About 2 tbsp nutritional yeast
  • Seasonings: turmeric powder, salt, pepper, garlic powder, onion powder, paprika
  • Optional: scallion and jalapeño
  • 1-2 tbsp olive oil

Steps

  1. Press some liquid out of tofu (optional, personal preference), then crumble tofu with your hands into a hot pan.
  2. Add seasonings and nutritional yeast to the tofu and mix well.
  3. Cook for a few minutes until the bottom is lightly browned. (Avoid overcooking or it may dry out.)
  4. Top with thinly sliced jalapeño and scallion.
  5. Serve with avocado and sourdough toast.
