This tofu scramble is a go-to for busy mornings—high in protein, totally customizable, and toddler-approved. With turmeric for anti-inflammatory support and nutritional yeast for a savory, cheesy flavor, it’s a simple, satisfying meal that comes together in minutes.
Ingredients (1-2 Servings)
- 1 block of tofu
- About 2 tbsp nutritional yeast
- Seasonings: turmeric powder, salt, pepper, garlic powder, onion powder, paprika
- Optional: scallion and jalapeño
- 1-2 tbsp olive oil
Steps
- Press some liquid out of tofu (optional, personal preference), then crumble tofu with your hands into a hot pan.
- Add seasonings and nutritional yeast to the tofu and mix well.
- Cook for a few minutes until the bottom is lightly browned. (Avoid overcooking or it may dry out.)
- Top with thinly sliced jalapeño and scallion.
- Serve with avocado and sourdough toast.
