A bold, herb-forward seasoning blend used as the flavor foundation in Haitian cooking. Think of it like a Caribbean sofrito—perfect for rice, stews, meats, fish, or even tofu! My husband’s family is from Haiti, and I have grown very fond of their cuisine and trying (with lots of practice) to learn the depth of layer and flavors in the food.

Ingredients

  • 1 bunch of parsley
  • 1 bunch of cilantro
  • 1–2 bunches of scallion
  • 2 cloves of garlic
  • 1 Scotch bonnet pepper (adjust to taste/spice level)
  • 1 red bell pepper
  • Splash of white vinegar
  • About 2 tbsp olive oil

Instructions

  1. Combine all ingredients in a blender or food processor.
  2. Blend until smooth.
  3. Store in an airtight jar in the fridge—or freeze in small portions for long-term use.

Wellness Notes

  • Use a few spoonfuls to flavor rice, especially when cooking with tomato paste for a sofrito-style base.
  • Add to marinades for meats, fish, or plant-based proteins like tofu.
  • Freeze in ice cube trays for easy grab-and-use flavor bombs.
